Spinach Banana Pecan Pancakes

These pancakes are packed with nutrients!

 1 handful of baby spinachAdd more spinach for greener pancakes.
 2 tbsp maple syrup or honey
 ¼ tsp fine salt
 2 tsp baking powder
 1 tsp cinnamon
 2 eggs
 2 bananas(1 cup once mashed)
 1 cup flour
 1 cup Green Valley Pecan meal
 ½ cup milkAny kind, adjust amount to desired consistency!
 2 tbsp coconut or avocado oilplus more for cooking

Mix all dry ingredients to a bowl an mix.


Mash the bananas and set aside.


Add milk, eggs, spinach, maple syrup or honey, coconut or avocado oil to blender and mis well.


Add wet mixture and mashed bananas to bowl with dry ingredients.


Cook on nonstick skillet or griddle over medium heat with oil or butter.


When bubbles form on the surface, flip and keep in skillet for three minutes or until fully cooked.


Stack pancakes, top with bananas and pecans, and drizzle with maple syrup if desired.
